Madagascar Cacao Beans/Chocolate

The Sambirano region in northern Madagascar is one of the world’s most renowned origins for premium cacao, blessed with fertile volcanic soil and an ideal tropical climate.
Cacao grown here has received international acclaim — including the Cacao of Excellence Award — for its rich fruity acidity and aromatic complexity.
We work with two varieties: Trinitario, prized for its balance of yield and flavor, and Criollo, the rare “King of Cacao,” accounting for only 0.1–0.3% of global production — a truly exclusive ingredient available to only a handful of brands worldwide.

The secret to quality lies not just in cultivation, but in precise fermentation and drying.
Using traditional tiered wooden boxes, we ferment the beans under carefully controlled temperatures, stirring them daily to ensure even fermentation.
This process brings out a bright, fruity aroma and clean acidity free from bitterness.
Drying takes place over 8–10 days under shade to preserve the delicate aroma while achieving optimal moisture levels.
The region’s natural airflow and climate provide ideal conditions that prevent flavor loss and ensure consistency.

Once in Japan, the beans are gently roasted at low temperatures using AI-controlled ovens, which draw out each bean’s unique character while maintaining nutritional compounds.
We then conche the chocolate for 48–72 hours to refine texture, soften acidity, and deepen aroma.
This “slow-crafted” approach — nurturing aroma over time — results in chocolate that is remarkably low in bitterness, yet vibrant, fruity, and powerfully expressive of cacao’s true nature.

Floating in the Indian Ocean, Madagascar is often called “The Island of Fragrance.”
Blessed with tropical richness and diverse vegetation, it has long been home to some of the world’s most precious aromatic plants. Among them, Ylang-Ylang, cultivated mainly in the eastern region and around Nosy Be Island, stands out as one of the most renowned varieties worldwide.
The island’s volcanic soil and warm, humid climate nurture flowers of exceptional richness and depth — a quality highly prized in the global fragrance and aromatherapy industries.

The legendary perfume Chanel No.5, created in 1921, features Madagascar Ylang-Ylang as one of its key notes.
Marilyn Monroe once famously said she wore “nothing but Chanel No.5 to bed” — the seductive floral note she referred to was, in fact, the Ylang-Ylang of Madagascar.

Our Ylang-Ylang flowers are traditionally handpicked at dawn, one by one, when their fragrance reaches its peak.
This delicate harvesting process is essential to preserve the purity and balance of their natural aroma.

Depending on distillation stages, Ylang-Ylang is classified as “Extra (or Superior), 1st, 2nd, and 3rd” grades.
